Del Pacifico’s wild-caught shrimp burgers, made with chopped, sustainable, fair-trade Mexican blue shrimp with only black pepper, garlic, and olive oil added, are a mild-tasting, nicely textured candidate. The company says its shrimp are certified for sustainability by the Marine Stewardship Council. In addition, each batch can be traced via batch numbers on each package. They come frozen and are quick to sear in a cast iron skillet or on the grill. Sauces and garnishes are the chef’s choice: aioli, Thousand Island, salsa, ripe tomato, avocado, red onion, you name it.
