The flour mixture that makes gluten -free bins so good

The immediate response to discovering that you can no longer have gluten can be despair – especially if you like baking. But gluten -free flour are increasingly easier to find in markets and offer a tasteful lifeline for people with gluten intolerance or celiac disease.

Baking without gluten is not necessarily more difficult, but it requires different ingredients and sometimes somewhat changed techniques. For delicious desserts it helps to the role of gluten in fried products, your available options and how you can use alternative flower.

What does gluten do in fried products?

Gluten, inherent to all types of wheat, rye and barley, is a mixture of proteins that, when moistened and mixed or kneaded, give structure and elasticity to dough and fried products. Although a wide range of gluten -free flour made of grains, tubers, nuts and seeds, you can't just choose one of them to stand for wheat flour. Instead, you need a mix of at least two or three, which can be bought pre -packed or mixed.

For basic desserts and other treats, Mrs. Goyoaga advised to start a recipe that has been specifically developed for one-on-one gluten-free melanges or one that only requires Tarne-flower or wheat flour. According to Alice Medrich, a celebrated baker and the author of 'gluten -free flavor flour', those recipes must come from experienced bakers who thoroughly test recipes. She also warned about wandering a recipe: “Do it exactly as written that first time to see if you even like it, what it does and then play around a bit.” Regarding bread: stay with recipes that are specifically written for gluten -free bread.

Because milling is inconsistent and flower densities vary between brands and varieties, use a scale to weigh your ingredients instead of measuring cups. If you still end up dry or crumbling Bakes when exchanging a blend, Mrs Cermelj and Mrs Medrich advise to reduce the amount of flour by 10 percent for wet cake strokes; Reducing the butter or oil by 20 to 30 percent for buttery delicacies such as cookies; And lowering the baking temperature with 25 degrees and increasing the baking time if necessary.

When you buy gluten-free flower mixtures or consult gluten-free baking recipes, you will notice that Xanthan Gum or Psyllium Husk powder is often mentioned with the ingredients. These are binders that Mrs. Cermelj, who also a Ph.D. In chemistry, described as “hydrocolloids, which means that they bind to a lot of water and make a sticky, elastic gel that mimic the effects of gluten.”

Xanthan -Gom can save cakes, cookies or brownies to come out crumbly. Mrs. Goyoaga said that a number of xanthan gum is especially useful for doughs needed, such as puff pastry, croissant, pasta and cake dough, to prevent them from falling apart when they are rolled or leaky butter when they are baked. As you gain experience with gluten-free recipes, you can guess how much or no, Xanthan tooth meat or psyllium peel powder must be added.
