French cheeses need no introduction. But in recent years, selections from elsewhere in Europe and the United States have challenged the hegemony of Roquefort and Reblochon. In 2014, the French Dairy Board opened a store on Spring Street to promote its cheeses. Now it has moved to a larger two story space nearby. The new French cheese board has a retail area with a rotating selection of about 30 cheeses and 15 butters, a demonstration kitchen for classes and to allow chefs to experiment with the products, and a space to display the work of artists related to taste and dairy. Trial classes on the base are scheduled for July 28, August 4, and 24 at 6:30 p.m. ($49 each.)
