Slopes, a wild allium, are signposts for early spring in woodlands, farmers’ markets, and menus. A new disaster vinegar called Zeal comes from Brightland, a Los Angeles-based company that sources its products, primarily olive oil, vinegar and honey, from small producers in California and elsewhere. Created in partnership with Lindera Farms, which forage the slopes of Virginia’s Shenandoah Valley, this pale gold vinegar has an aroma and flavor distinguished with a mild tartness. It is excellent for preparing grain salads, poached leeks and spring vegetables.
