Good morning. Melissa Clark recently went big on upside down pies in The Times, and that’s all I want to make: peach upside-down cake (above); pineapple upside down cake with pecans; upside down berry cake; reverse bananacake. They are relatively easy to assemble and are perfect for those of us who buy too much at the farmers market and shudder at the sight of ripening fruit on the counter.
“Upside down pies don’t need the pristine fruit you would want for a shortcake or pie,” Melissa wrote. “No matter how crinkled your peaches or saggy blueberries, once caramelized and batter-baked, they become syrupy and colorful, a glittering crown with no further embellishment.”
Follow her lead tonight, and the week will start off right. (Especially if you’re making this creamy, lemony dinner pasta for the pie.)
