In particular, the South Indian states of Tamil Nadu, Andhra Pradesh and Telangana celebrate Pongal, a traditional harvest festival. It honors Lord Surya Narayan, the ruler of the planets, and is related to harvesting agricultural products. In northern India, the festival is known as Makar Sankranti. This event, known in Tamil as ‘pongal’, meaning ‘cooking’, is seen as a way of giving thanks for last year’s harvest.
The festival is held from January 15 to January 18 and lasts for four days. The dish known as “Pongal” is prepared on the day of Pongal by cooking it outside in the sun, preferably early in the day right after sunrise. The best rice from the most recent harvest is chosen for this dish. Pongal is made with rice, milk, ghee, jaggery, raisins and dried fruits as main ingredients. People shout “Pongalo Pongal” as the milk boils and overflows, believing that this phrase will bring prosperity to the home. The meaning of the term Pongal is complex and includes the concept and name of the festival, the food served and a connotation of prosperity.
