Ingredients required for making the fish curry
1) 6-7 pieces of clarified butter (ghee)
2) chopped green chilies
3) 3-4 cloves of finely chopped garlic
4) 2 pureed tomatoes
5) teaspoon red chili powder
6) teaspoon coriander powder
7) 1/2 teaspoon turmeric powder
8) 3 tablespoons of cooking oil
9) Water (if necessary)
10) 1 cup fresh coriander leaves
11) Salt
This fish, which goes by different names such as Rajameen, Seermeen and Raja Mackerel, should be washed thoroughly and then coated with a mixture of salt, red chilli powder, turmeric and oil.
Marinate the fish for an hour. Then mix coriander leaves, green chillies and garlic cloves into a smooth paste. Heat the oil in a pan and shallow fry the marinated fish pieces.
Heat the oil in another pan and add the coriander paste. Cook for a few minutes and then add coriander powder, red chili powder, salt and tomato paste. Add more water if necessary and cook until the gravy comes to a boil. Place the fish pieces in a bowl and pour the gravy over them. Garnish with fresh coriander leaves and serve hot.
