Is there a dish that is complete without potatoes? However, there is also a long list of dishes that you can make with potatoes, but you have never heard of them. And unless you’re from Benaras, there’s little chance you’ll know how delicious Banarasi Dum Aloo is. If you haven’t tried this recipe yet, what are you waiting for?
Small potatoes – 1/2 kg
Tomatoes sliced – 4
Cream – 2 tablespoons
Red pepper – 4
Cashew – 2 tbsp
Cumin – 1 tsp
Fennel – 1 tsp
Kasuri methi – 1 tbsp
Red chili powder – 1/2 teaspoon
Ginger minced – 1 inch
Garam Masala – 1/2 tsp
Desi Ghee – 1 tbsp
Green cardamom – 4
Green coriander leaves chopped – 1 tbsp
Oil – for frying
Salt – to taste
Step 1: To make Banarasi Dum Aloo, first take the potatoes, peel them and wash them thoroughly in clean water.
Step 2: Cut the potatoes from all sides. Then wipe the potatoes with a clean cloth and set them aside on a plate.
Step 3: Now put oil in a pan and let it heat over medium heat. When the oil gets hot, add the potatoes and fry until golden brown and place on a plate.
Step 4: Now heat a little oil in another pan. Add cumin, fennel, red pepper, chopped tomatoes and chopped cashew nuts and fry. Keep the flame on medium. Roasting this mixture takes about 5 minutes.
Step 5: Now turn off the gas and let the mixture cool down. Then grind the tomato masala in the mixer and prepare the puree. You can also add a little water for this.
Step 6: Now put ghee in a pan and heat it. After the ghee has melted, add green cardamom and kasoori fenugreek and fry it for a few seconds.
Step 7: Then add tomato paste and salt to taste. Now let the gravy boil while stirring in between. After some time, add about two cups of water and let the ingredients boil. When the gravy comes to a boil, add the baked potatoes and cover the pan over low heat and cook for about 15 minutes.
Step 8: While making Banarasi Dum Aloo, keep stirring the vegetables using a ladle in between. Add fresh cream and garam masala to it and mix. Turn off the fire after cooking.
Step 9: Your delicious Banarasi Dum Aloo is ready. Garnish with chopped coriander leaves before serving. Serve the dish with roti, naan or paratha.
