Many Indian festivals and some days of the month, such as Ekadashi, require worshipers to fast. On such days, they are not allowed to eat much food and can prepare their meals using only selected ingredients. Today we are here to help you prepare a sweet dish that you can eat worry-free during your fast. The dish is known as Danedar Kalakand and the main ingredient is milk.
Ingredients:
Milk – two liters
Sugar – kg
Pistachios – 3 tbsp
Cardamom powder – 2 pinches
Ghee – 2 teaspoons
Lemon juice – 1 tsp
How to make Danedar Kalakandi
Bring the milk to a boil over low heat. When the milk has halved, add lemon juice and increase the heat. Reduce it again when the milk begins to crackle. Leave the cracked milk on low heat for 15 minutes and then turn off the gas. Filter the cracked milk with a tea strainer and separate it from the water. Wrap the chenna you get from straining in a cloth and keep it squeezed. After half an hour, remove the chenna from a large plate and mash it.
Heat the milk in a pan and add sugar and cardamom powder to it. When the milk gets hot, add chhena and mix it well. Grease a plate or bowl with ghee and divide this mixture in it. Add finely chopped pistachios. Place the Kalakand in the fridge for two to two and a half hours to set. After two and a half hours, take out the Kalakand and cut into squares with a knife. Danedar Kalakand is ready to be served in the evening.
