The negligible amounts of glucose and sugar-related compounds in butternut squash make it ideal for maintaining blood sugar levels in the body.
According to an article published by The Indian Express, researchers from CSIR – Indian Institute of Chemical Technology (IICT) conducted a study in 2012-13. It showed that the juices of 13 vegetables were able to inhibit the activity of an enzyme responsible for the development of type 2 diabetes and obesity. Butternut squash was found to be the second best vegetable after radish in stopping the activity of the enzyme Protein Tyrosine Phosphatase 1B, which plays an important role in increasing insulin resistance.
