With countless people waking up to a cup of tea every morning, the drink has great significance all over the world. The popularity of tea is so great that the United Nations General Assembly has declared May 21 as International Tea Day.

- Kashmiri afternoon chai
This variation of tea from the northern region of Kashmir has a pink tinge. It is considered authentic Kashmiri chai which is prepared by brewing green tea leaves with spices such as cinnamon, cardamom and nuts including pistachio and almond. In addition, a pinch of salt is also added to the chai. - Gujarati Ukado
Ukado is an herbal tea from Gujarat that serves as a homemade remedy for common diseases. It contains ingredients such as honey, lemon, ginger and mint that help boost immunity and give the drink a pleasant taste. - Iranian chai
People who live in Pune or Hyderabad prefer to drink this tea which contains aromatic herbs in addition to the refreshing tea leaves. It is usually accompanied by a bun maska or a maska pav and can be found in Irani hotels in Mumbai. - Bengali Labu Cha
Consumed in West Bengal, Labu Cha is basically a black tea prepared by brewing tea levea instead of the tea dust. It is a drink spiced with ginger powder and black salt with a hint of lemon in it. It is the best companion for many Bengali who meet at nukkad chai points to chat and enjoy a piping hot Labu Cha. - Mangalorean Kasai
This unique chai is herbal and has significant health benefits. Mangaloreans consider this their ‘kadha’ which contains jeera, coriander, fennel seed and fenugreek. These dry-roasted herbs are boiled with water and sweetened with some sugar or misri.
