The common perception is that any kind of dessert is simply loaded with calories.
There is no end to the sweet craving one experiences at odd hours. For one, it’s in between, while for the other a dessert after lunch or dinner is a must. In an urge to satisfy this craving, people start consuming a lot of unhealthy, sugary products that are readily available in the home. While there’s nothing wrong with wanting to give in to your cravings, make sure they’re choosing healthy, nutritious foods. But the common perception is that any kind of dessert is just full of calories and not good for your body. To change the idea and bring you a healthy alternative, here is Chef Saloni Kukreja’s date and dried fruit recipe. This is easy to make at home and delicious at the same time.
Ingredients required: Dates – 1 cup, cashews and hazelnuts or other nuts of your choice – 4 to 5 tbsp, cinnamon powder – 1/2 tsp or cardamom powder, ghee – 2 tsp, poppy seeds – 1.5 tbsp. The amount of these ingredients can be changed as desired.
In her post, Saloni shows you how to make this mouth-watering roll recipe. She mentions that this can also be served at festivals or added to your iftar meals.
How do you make dates and dried fruit sandwiches?
Start by pitting the dates and coarsely chop them (if your dates are too dry, soak them in warm water before using).
Toast the poppy seeds dry in a pan over a low heat for a minute before removing them from the heat.
In the same pan, melt 1 tablespoon of ghee and toast the cashews and hazelnuts with the cinnamon powder.
Once toasted, add another half of the ghee and chopped dates, along with half of the toasted poppy seeds and cinnamon powder.
Combine everything and cook over low heat until the mixture begins to leave the pan.
Transfer the mixture to a flat surface, let it cool slightly and roll into a log.
Top the block with the remaining poppy seeds, wrap in aluminum foil or plastic and let cool until hard.
Cut into round pieces and it is ready to serve.
