Bengali cuisine is known for its delicious sweets, with Sandesh (shondesh) at the center. With its velvety texture and different shapes, Sandesh is often decorated with various toppings. If you want to enjoy the charm of this Raksha Bandhan’s homemade sweets, then look no further than this beloved Bengali delicacy that can be prepared in minutes.
The beauty of Sandesh lies in its simplicity, requiring only three basic ingredients: powdered sugar, chena (paneer) and cardamom powder (elaichi). Making this delectable dessert at home ensures both quality and taste, and promises to be an instant hit among your family members.
Surprisingly, making Sandesh is a piece of cake. Traditionally, it involves curdling the milk, separating the chena (paneer), kneading it to get a smooth consistency, and then gently cooking it with powdered sugar. Alternatively, you can opt for store-bought fresh paneer. For this recipe you will need two cups of crumbled paneer, one cup of powdered sugar and one teaspoon of cardamom powder.
Start by placing the crumbled paneer and icing sugar on a plate, adjusting the sugar to your own preference. Mix the ingredients thoroughly. Heat a pan over medium heat and add the paneer-sugar mixture, stirring constantly. While the mixture is roasting, add cardamom powder for a fragrant touch. Cook until the mixture begins to pull away from the sides of the pan. Remove from heat and let it cool.
While the mixture cools, put a touch of ghee in a bowl and add the slightly warm Sandesh mixture. Let it act for about half an hour. You have the creative freedom to garnish it with your favorite nuts and even shape it to your liking. Once ready, serve and enjoy the homemade delight.
