Blanc de noir refers to white wine made from red grapes such as pinot noir, manipulated in such a way that the juice, which is white, has little or no contact with the red skins. It’s typical of champagne, but occasionally winemakers do it to produce a still white wine, as the Prisoner Wine Company of St. Helena, California has done with its new Blindfold Blanc de Noir. Some Viognier and Gewürztraminer are also mixed in. The unusual result is pale and refreshing, with hints of citrus zest and a hint of nutty toast. Pour it blind, as the name suggests, and ask your wine-loving friends to guess the grape.
