Santosh Tamang, executive chef at The Hemp Factory, shares some delectable and healthy recipes for Diwali sweets:
Hemp Besan Ladoo
Ingredients:
1 cup besan/gram flour
A fourth Cup of Ghee
Half cup of powdered sugar
1 tsp hemp hearts
Half tsp cardamom powder
1 tsp hemp powder
10 almonds to garnish
Process:
Dry roast the besan over medium heat for about 10-15 minutes, stirring constantly. The uncooked style shouldn’t be there.
Add ghee and mix effectively.
Cook the besan until the fat separates for about 8-10 minutes and turn off the heat.
Add sugar, cardamom powder and hemp powder. Mix well so that there are no lumps. Allow the combination to cool completely. Once the combination has cooled, add hemp hearts.
Grease your palms with ghee and start forming laddoos. Make easy and spherical laddoos. Decorate with almonds.
Serve or store in a hermetic container.
Hemp-soaked Nankhatai
Ingredients:
1 fourth cup all-purpose flour (175 grams)
2 tablespoons positive rava (semolina) 25 grams
1 tablespoon hemp flour
Half a cup of powdered sugar (80 grams)
1/2 cup ghee (115 grams)
half teaspoon salt
Half teaspoon cardamom powder
2 teaspoons grated pistachios or nuts of your choice
1 tablespoon Hemp hearts
Process:
Sift maida (all-purpose flour) into a bowl. Keep it apart.
In a bowl, beat ghee and sugar with a spoon or beat until creamy, soft and pale.
Add all-purpose flour, hemp flour, Sooji, salt, and cardamom powder to the ghee-sugar combination.
Combine everything with a spatula, then use your palms to collectively carry the dough. Do not knead the dough.
If the dough seems dry, add a teaspoon of ghee and work the dough gently until it comes together.
Let the dough rest covered in the fridge for at least half an hour.
Mixing Ghee and Flour for Nankhatai Dough
Squeeze a lime-sized portion of the dough. Roll it between your palms to get an easy spherical shape. Hardly press them flat.
Place it on the baking tray lined with baking paper.
Repeat with the rest of the cookie dough.
Set them aside 1 inch, as they may widen as they bake.
Using a knife, make a crosswise monster in the center. You can also make a small indentation in the heart as a substitute for a crisscross sample.
Place in the fridge for another 15 minutes.
Preheat your oven to 190 degrees C.
Bake in a preheated oven for 15 to 16 minutes. It may cost you a little less or extra time. Keep an eye out after 13 minutes.
Sprinkle some grated pistachios and rose petals and Hemp hearts
Note: The cookies will likely be smooth in the center but will solidify as they cool.
Double Chocolate Chip Hemp Heart Cookies
Ingredients:
Half cup of liquid coconut oil
Quarter cup of almond, soy, or rice milk
2 teaspoons vanilla extract
1 cup coconut or brown sugar
1 cup hemp seeds, divided
1 cup chocolate chips (semi-candy or vegan)
2 cups gluten-free OR all function flour
1 teaspoon baking powder
1 teaspoon baking powder
teaspoon kosher salt
Process:
Preheat the oven to 350 levels.
Place coconut oil, almond milk, vanilla, coconut sugar, 3/4 cup hemp seeds and 1/2 cup chocolate chips in a blender and puree for 30 seconds or until small pieces remain, but the combination is creamy.
In a separate large bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the chocolate combination to the flour combination and stir until the components are completely mixed. Stir in the remaining chocolate chips and hemp seeds.
Use a small ice cream scoop or 2 tablespoon measure to place cookies on a silpat or parchment-lined baking sheet. Use the heel of your hand to gently press cookies down and shape them into circles.
Bake cookies 11 minutes for softer cookies and 13-14 minutes for crispy cookies.
