Chocolate Protein Yogurt
Ingredients:
Greek Yogurt – 170 grams Chocolate Protein Powder – 1 tsp Unsweetened Coconut Powder – 1 tsp Maple Syrup OR Honey – 1-2 tsp Cinnamon Powder – a pinch of Salt – a pinch (to enhance the chocolate flavor) Vanilla Extract – for flavor
Yogurt Topping:
Peanut Butter – ½ Tbsp Peanut Butter Powder – ½ Tbsp Granola – ¼ cup Banana Slice – 1 Blackcurrant, Raspberry, Strawberry – ¼ cup (fresh or frozen)
Method:
Place the yogurt in a bowl. Add 1 scoop of chocolate protein powder, cocoa powder, maple syrup or honey, vanilla extract.
Use a spoon to combine the ingredients. Aggressively mix the ingredients with your spoon until all of the powder is incorporated into the yogurt and the yogurt mixture appears fluffy and has a creamy texture. About 30 – 40 seconds.
The yogurt is ready to enjoy. Top the yogurt with your favorite toppings: banana slices, frozen or fresh berries, peanut butter, granola, shredded coconut, etc.
Kesar Shrikhand Golgappe
Ingredients for Shrikhand:
Greek Yoghurt / Hung Yoghurt – 900 g
Sugar – 1 ½ cup Milk – 2 tbsp
Saffron – 2 generous pinches
Green cardamom – 10 pods (open the pods and crush the seeds into a fine powder)
Grated almonds, pista and cashews – for garnish
Ingredients for Puri:
Rice flour – ¼ cup
Whole wheat flour – ¼ cup
Maida – ¼ cup Water – 5 tbsp
Salt – pinch Oil for frying
Method to make Shrikhand:
Take a muslin cloth/handkerchief and spread it on a bowl. Pour Greek yogurt onto the cloth. Bring the edges of the fabric together, tie it with a string. Hang up the cloth and place a bowl under it to drain the excess whey overnight.
Add the saffron to the milk and set aside.
Put the yogurt in a deep bowl. Add sugar, cardamom powder and the saffron milk and beat well until the sugar has dissolved and the yoghurt becomes smooth and creamy.
Garnish with almonds or other nuts of your choice. Refrigerate an hour before serving.
Method To Make Puri:
Combine rice flour, wheat flour, all-purpose flour, and salt. Add water little by little and mix. Slowly knead into a semi-stiff dough. Divide the dough into equal parts.
Roll out the dough on a floured surface into a thin circle with a rolling pin and cut out circles with a cutter. Remove the excess dough and add it to the unused dough.
Carefully slide 3 to 4 puris into the hot oil in a skillet and fry on both sides until golden brown. Drain on absorbent paper. Repeat with the remaining dough.
Assembling:
Lightly tap the top of the puri with the tip of a spoon or forefinger to make a small hole.
Spoon in some shrikhand. Immediately in your mouth.
Watermelon pizza
Ingredients
Seedless watermelon slice – 1
Cream Cheese Glaze Softened cream cheese – 150 g
Greek yogurt – ½ cup
Powdered sugar – ¼ cup
Freshly squeezed orange juice – 2 tbsp
Top fruit
Dragon fruit diced – 10 g
Diced plum – 10 g
Diced kiwi – 10 g
Cherry in slices – 10 g
Blueberry – 10 g. Mint leaves – 5 g
Method
In a medium bowl, beat the softened cream cheese until nice and smooth. Add the Greek yogurt and freshly squeezed orange juice and beat until smooth. Add the powdered sugar and mix until completely smooth.
Cut the watermelon into slices about 5 cm thick and cut them into wedges. Spread a few tablespoons of cream cheese frosting on each slice, making sure it doesn’t run over the edge. Add an assortment of sliced fruit to the top of the frosting.
Garnish with fresh mint leaves. Serve immediately.
