Who doesn’t love mixed vegetable gravy? The dish not only tastes delicious, but is also good for health. The dish has all the necessary nutrients that a person needs. You must have had dry mix veg, but adding gravy makes it even more delicious. Any seasonal vegetables can be used in this recipe, many can add cheese to make it. Ingredients needed for Mix Veg
1 bowl of breadcrumbs
1 bowl of potatoes
1/2 bowl of beans
½ bowl of peas
1 cup Cauliflower
2 tomatoes
2 onions
5-6 cloves of garlic
1 inch piece of ginger
7-8 cashew nuts
2 teaspoons red chili powder
1 teaspoon cumin powder
½ teaspoon turmeric
1/2 teaspoon garam masala
2 teaspoons chopped coriander
3 teaspoons oil
Salt – to taste
How to Make Mix Vegetarian Gravy
To make Mix Veg Gravy, take paneer and chop finely. Then also cut the potatoes, onions, beans, cauliflower and tomatoes. Now take a wok and put oil in it and heat it. When the oil is heated, add the chopped onions and fry them until they turn brown. Then add chopped ginger, garlic and cashew pieces to it and fry them well. Add the chopped tomatoes and fry. When the tomatoes start to soften, turn off the gas and let the masala cool.
When the masala has cooled, make the paste using a grinder or mixer and set it aside. Now add oil to the pan and keep the heat on medium heat. Once the oil is heated, add the Masala paste and fry it. After a while, add red chilli powder, turmeric, cumin powder, garam masala and salt to taste to the masala gravy, mix well and fry.
After frying the gravy for 3-4 minutes, when the oil starts to separate, add chopped vegetables and paneer. Mix everything well with the gravy using a ladle and let it boil. Add water to the gravy as needed.
Now lower the flame of the gas and cover the vegetable and let it cook for 10 minutes. Keep stirring the vegetables in between using a ladle. When the mix-veg gravy is ready, turn off the gas. Your flavored Mix Veg Gravy is ready. Garnish with chopped coriander leaves before serving.
You can have it with paratha, roti or naan.
